Pappardelle alla fiesolana

Delicious take on a halal pappardelle alla fiesolana using Najma Smoked Beechwood Turkey Rashers

  • 1 Najma Premium Smoked Beechwood Turkey Rashers, chopped up
  • A drizzle of olive oil
  • 1 medium onion, chopped
  • 4 cloves of garlic, minced
  • 600ml Passata
  • 1 tsb salt
  • 1½ tsb black pepper
  • ½ tsb chilli flakes
  • 1 tsb mixed herbs
  • 300g pappardelle pasta
  • Boiling water
  • A drizzle of olive oil
  • 1 cup double cream
  • 1/4 cup of cheese
  • Parsley, chopped to garnish


  • Sauté an onion in some olive oil until it’s soft and translucent
  • Add 4 cloves of minced garlic and sauté for 2-3 mins
  • Add a 600ml of passata and stir well
  • Add the chopped turkey rashers to the sauce
  • Add 1 tsp salt, 1 1/2 tsp black pepper, 1/2 tsp chilli flakes and 1 tsp mixed herbs
  • Put the lid on and let it simmer for 20 mins
  • Get a saucepan filled with water, add some salt and bring it to the boil
  • Add 300g of pappardelle pasta and cook until al dente
  • Strain the pasta, reserving 1/4 of the pasta water and toss the pasta through some olive oil
  • Take the sauce off the heat and add 1 cup of double cream and the 1/4 cup of pasta water
  •  Add 1/4 cup cheese of your choice
  • Add the pasta to the sauce until it’s all coated in it
  • Serve in a pasta bowl with some parsley on top and more grated cheese
  • Enjoy!
