Chicken Sausage & Pesto Pasta

INGREDIENTS

  • 1 pack Najma Chicken Sausages
  • boiling water
  • 240g Pasta (we used whole wheat Fusilli)
  • 200g Pesto
  • 3 tbsp. olive oil
  • 1 medium onion, chopped
  • lemon juice (optional)
  • a handful of Grated cheese (optional)
  • 1 tbsp. Pine nuts

Method

Cook pasta according to pack instruction. Reserve 1/2 cup of the cooking water. Drain and set aside

Slice your chicken sausages. In large saucepan over medium-high heat, drizzle a little olive oil. Cook the sausage slices until browned and set aside.

In the same saucepan, over medium-high heat, add the olive oil. When the oil is hot, add the diced onion. Cook, stirring frequently, 2-3 minutes until onion is softened. Reduce heat to low.

Add the sausages, pasta and pesto, season to taste and add lemon juice (optional).

Sprinkle  grated cheese and pine nuts (optional).
