Rahema’s Egg & Turkey Cups

INGREDIENTS

  • 3 eggs
  • 3 slices of Najma Wafer thin Turkey slices
  • Salt and pepper

Method

Pop each turkey slice into a muffin tin and crack an egg into each one.

Pop them in a pre heated oven for about 15 minutes or longer if you prefer a fully cooked yolk. Once cooked season with salt and pepper.

Grate a handful of Parmesan cheese and mix with the garlic, 5 tbsp mayonnaise and 1 tbsp white wine vinegar. Season to taste. It should be the consistency of yogurt – if yours is thicker, stir in a few tsps water to thin it.

Top with some nachos or crisps.

Grate some additional cheese to sprinkle onto the salad. Tear the lettuce into large pieces and put in a large bowl. Add the chicken, croutons, salad and dressing and mix lightly. Sprinkle over the cheese and serve up.
